- 3 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 cup warm milk (about 110°F)
- 1/4 cup unsalted butter, melted
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted (for coating)
- 1/2 cup granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Feel free to substitute whole wheat flour for a heartier texture, or use almond milk to make it dairy-free.
Instructions
- Begin by activating your yeast. In a small bowl, combine the warm milk and yeast. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Stir until well combined.
- Make a well in the center of the dry ingredients and add the melted butter, pumpkin puree, vanilla extract, and the activated yeast mixture. Mix until a soft dough forms.
- Turn the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. This was always my favourite part as a child, feeling the dough transform under my hands.
- Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Once risen, punch down the dough and divide it into small, even pieces — about the size of a walnut.
- In a small bowl, combine the remaining granulated sugar and cinnamon. Dip each dough piece in melted butter, then roll it in the cinnamon-sugar mixture. Place them in a greased bundt pan, layering as you go.
- Cover the pan with a towel and let the dough rise for another 30 minutes.
- Preheat your oven to 350°F (175°C). Bake the monkey bread for 30-35 minutes until golden brown and fragrant.
- Allow it to cool for 10 minutes before inverting onto a serving plate. The anticipation of that first slice is truly worth it!
