  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 4 slices provolone cheese or mozzarella (substitute with vegan cheese if preferred)
  • 2 cups cooked jasmine or basmati rice (or cauliflower rice for a low-carb option)
  • 1 tablespoon Worcestershire sauce (optional, adds depth)
  • Fresh parsley or chives, chopped, for garnish

Instructions

  1. Start by prepping all your ingredients. Thinly slice the sirloin steak against the grain—this helps keep the meat tender. Slice your peppers and onion thinly as well; the thinner they are, the better they’ll cook and meld with the steak.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once shimmering, add the sliced steak in a single layer. Let it sear for about 2 minutes without moving it—this caramelisation is crucial for deep flavour. Then toss and continue to cook for another 2 minutes until just browned but still tender. Remove the steak from the pan and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Toss in the onions, green and red peppers, and a pinch of salt. Sauté for 5-7 minutes until softened and lightly caramelised, stirring occasionally. Add the minced garlic, smoked paprika, and oregano during the last minute of cooking for that warm, fragrant aroma that always reminds me of my mum’s spice cupboard.
  4. Return the steak to the pan, drizzle Worcestershire sauce over it if using, and stir everything together. Taste and adjust seasoning with salt and pepper.
