- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup long-grain rice
- 1 1/2 cups water

Let’s get cooking! Follow these simple steps to create a dish that’s sure to become a family favorite.
- Heat the olive oil in a large pot over medium heat. Once hot, add the chicken thighs, cooking until golden brown on both sides, about 5 minutes per side. Remove the chicken and set aside.
- In the same pot, add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic and cook for another minute.
- Add the chicken broth, lemon juice, lemon zest, and dried thyme to the pot. Season with salt and pepper, then return the chicken to the pot.
- Bring the mixture to a gentle simmer. Cover and cook for 15 minutes, allowing the chicken to soak up the lemony goodness.
- Add the rice and water to the pot, stirring gently. Cover again and cook for another 20 minutes, or until the rice is tender and has absorbed most of the liquid.
