As with any recipe passed down through generations, simplicity is key. Here’s what you’ll need to create this heartwarming dish:
- 1 pound of fresh carrots, peeled and cut into evenly sized pieces
- 3 tablespoons of unsalted butter
- 2 tablespoons of honey
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- A pinch of cinnamon (optional, but a nod to my family name!)
If you’re looking to switch things up, you can substitute the honey with maple syrup for a slightly different sweetness, or use ghee instead of butter for a richer, nutty flavor.
Instructions
- Begin by placing the carrots in a large saucepan and covering them with water. Bring to a boil over medium-high heat and cook for about 8-10 minutes, or until tender but not mushy. Drain well.
- In the same saucepan, melt the butter over low heat. Stir in the honey, salt, and pepper until the mixture is smooth and bubbling slightly.
- Add the drained carrots back into the pan, tossing them gently to coat in the honey butter sauce. Allow them to cook for an additional 5 minutes, stirring occasionally, until they are glazed and glistening.
- If you’re feeling adventurous, sprinkle a hint of cinnamon over the top before serving. It’s a personal touch that reminds me of those cinnamon-dusted crumbles from my childhood.
