- 500g ground beef
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 400g can of diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the onion and cook until it’s soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking up any clumps with a wooden spoon — the same trusty kind my mum used to wield.
- Stir in the red bell pepper and cook until it starts to soften.
- Add the diced tomatoes, tomato paste, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine all the ingredients well.
- Reduce the heat to low, cover the skillet, and let the mixture simmer for about 15-20 minutes, allowing the flavors to meld together beautifully.
- Check the seasoning, adjusting salt and pepper if needed.
- Sprinkle with fresh parsley before serving.
