  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the onion and cook until it’s soft and translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking up any clumps with a wooden spoon — the same trusty kind my mum used to wield.
  4. Stir in the red bell pepper and cook until it starts to soften.
  5. Add the diced tomatoes, tomato paste, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine all the ingredients well.
