- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder (adjust to taste)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Fresh cilantro for garnish
- Tortilla chips for serving
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, approximately 5-7 minutes.
- Stir in the cumin, paprika, chili powder, salt, and pepper. Cook for another minute to allow the spices to release their flavors.
- Add the black beans and diced tomatoes with green chilies. Stir to combine and let it simmer for about 5 minutes.
- Reduce the heat to low and stir in the sour cream and 1 cup of the shredded cheddar cheese. Mix until the cheese is melted and the mixture is creamy.
- Transfer the dip to a serving dish and sprinkle the remaining cheddar cheese on top. Garnish with fresh cilantro.
- Serve warm with tortilla chips and enjoy the comforting flavors!
