  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Tortilla chips for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
  2. Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, approximately 5-7 minutes.
  3. Stir in the cumin, paprika, chili powder, salt, and pepper. Cook for another minute to allow the spices to release their flavors.
  4. Add the black beans and diced tomatoes with green chilies. Stir to combine and let it simmer for about 5 minutes.
  5. Reduce the heat to low and stir in the sour cream and 1 cup of the shredded cheddar cheese. Mix until the cheese is melted and the mixture is creamy.
  6. Transfer the dip to a serving dish and sprinkle the remaining cheddar cheese on top. Garnish with fresh cilantro.
  7. Serve warm with tortilla chips and enjoy the comforting flavors!
