Ingredients
Scale
- 8 ounces lo mein noodles
- 1 tablespoon vegetable oil
- 1 pound ground beef
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, thinly sliced
- 1 cup broccoli florets
- 1/2 cup shredded carrots
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 2 green onions, sliced
- 1 tablespoon sesame seeds (optional)
Feel free to substitute the vegetables with whatever’s in season or whatever brings a smile to your face. Mum always said the best meals are the ones that make you feel at home.
Instructions
- Cook the lo mein noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, about 5 minutes. Break the meat into small pieces as it cooks.
- Add the garlic and ginger to the skillet, stirring continuously for about 1 minute until fragrant. This step always reminds me of the early mornings in Devon, where the kitchen was filled with the comforting aroma of spices.
- Stir in the red bell pepper, broccoli, and carrots. Sauté for 3-4 minutes until the vegetables begin to soften.
- In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, and sugar. Pour the sauce over the beef and vegetables, mixing well to combine.
- Add the cooked noodles to the skillet, tossing everything together until the noodles are well coated and heated through, about 2 minutes.
- Garnish with sliced green onions and sesame seeds, if using. Serve hot, and perhaps share a story or two as you enjoy.
