- 1 pound ground beef
- 1 small onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 box Jiffy cornbread mix
- 1 egg
- 1/3 cup milk
- 1 cup shredded cheddar cheese (optional, but highly recommended)
- 1 can (15 oz) creamed corn
- 1 tablespoon olive oil
Feel free to substitute ground turkey or chicken for the beef if you’re looking for a lighter option. You can also spice things up by adding a chopped jalapeño or a pinch of cayenne pepper.
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with a bit of olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 6-8 minutes.
- Stir in the garlic powder, paprika, salt, and pepper. Cook for an additional 2 minutes, allowing the spices to infuse the beef.
- In a separate bowl, combine the Jiffy cornbread mix, egg, milk, and creamed corn. Stir until just combined; lumps are okay.
- Add the cooked beef mixture to the prepared baking dish, spreading it evenly across the bottom. Sprinkle the shredded cheddar cheese over the beef layer.
- Pour the cornbread batter over the beef and cheese, spreading it evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
- Let it cool for a few minutes before serving. Enjoy the layers of flavor with each bite!
