Feel free to substitute ground turkey or chicken for the beef if you’re looking for a lighter option. You can also spice things up by adding a chopped jalapeño or a pinch of cayenne pepper.

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with a bit of olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 6-8 minutes.
  4. Stir in the garlic powder, paprika, salt, and pepper. Cook for an additional 2 minutes, allowing the spices to infuse the beef.
  5. In a separate bowl, combine the Jiffy cornbread mix, egg, milk, and creamed corn. Stir until just combined; lumps are okay.
  6. Add the cooked beef mixture to the prepared baking dish, spreading it evenly across the bottom. Sprinkle the shredded cheddar cheese over the beef layer.
  7. Pour the cornbread batter over the beef and cheese, spreading it evenly with a spatula.
  8. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
