- 1 pound ground beef
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 can (15 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen mixed vegetables
- 1 tablespoon olive oil
Feel free to substitute the dried thyme with fresh thyme from your garden if you have it. And if you’re like me, always experimenting, try adding a pinch of cinnamon for a surprising depth of flavour.
Instructions
- Set your Instant Pot to the sauté setting and add the olive oil. Once hot, add the diced onion and cook until translucent, about 3-4 minutes, stirring occasionally.
- Add the minced garlic and ground beef to the pot. Cook until the beef is browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
- Stir in the tomato paste, ensuring it coats the beef and onion mixture evenly. This step always reminds me of how my mum would say, “The secret is in the mixing, Tessa!”
- Add the diced tomatoes, beef broth, Worcestershire sauce, thyme, salt, and pepper. Give everything a good stir to combine.
- Secure the lid on the Instant Pot and set it to pressure cook on high for 10 minutes. This is the perfect time to set the table — just like we did back home, with mismatched plates and always too many chairs.
- Once the cooking time is up, allow the pressure to release naturally for 5 minutes, then do a quick release for any remaining pressure.
- Stir in the frozen mixed vegetables and return the lid to let the residual heat cook them through for about 5 minutes.
- Serve hot, garnished with fresh herbs if desired, and enjoy the homely flavour that wraps you in a cozy hug.
