  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons honey (use wildflower honey for best depth)
  • 1 tablespoon hot sauce (like sriracha or your favourite chili sauce)
  • 1 tablespoon apple cider vinegar
  • 2 cups cooked jasmine or basmati rice
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 2 green onions, sliced thin
  • 1 tablespoon toasted sesame seeds (optional)
  • Fresh coriander leaves for garnish

Substitution tips: If you prefer, swap ground beef for ground turkey or plant-based mince for a lighter or vegetarian option. Maple syrup can replace honey if you want a different sweetness profile, and any chilli flakes or powder can substitute the cayenne if you want to control the heat more precisely.

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Once shimmering, add the chopped onions and sauté for about 5 minutes until soft and translucent, stirring occasionally.
  2. Add the minced garlic, smoked paprika, ground cumin, and cayenne pepper to the onions. Stir for 1 minute until fragrant, taking care not to burn the spices.
  3. Raise the heat to medium-high and add the ground beef. Break it apart with a wooden spoon and cook until browned and cooked through, about 7-8 minutes. Season with salt and pepper halfway through.
  4. In a small bowl, whisk together the honey, hot sauce, and apple cider vinegar. Pour this mixture over the browned beef, stirring well to coat everything in the spicy-sweet glaze. Allow it to simmer for 2-3 minutes until the sauce thickens slightly.
  5. While the beef simmers, prepare your rice and steam the broccoli if not already done. I like to cook the rice with a pinch of salt and a bay leaf for extra flavour—little touches my mum taught me.
  6. To assemble, spoon a generous amount of rice into each bowl. Top with the hot honey beef, steamed broccoli, shredded carrots, and a sprinkle of green onions and toasted sesame seeds.
  7. Garnish with fresh coriander leaves for a burst of freshness and serve immediately. A wedge of lime on the side is a lovely addition if you want a little brightness.
