Substitution Suggestions: Feel free to swap ground beef with turkey or chicken for a lighter option. You can also substitute the black beans with kidney or pinto beans based on your preference.
Instructions
Follow these steps to bring a piece of my kitchen into yours, where every meal tells a story.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned.
- Stir in the cumin, paprika, and chili powder, ensuring the beef is well coated with the spices. Cook for an additional 2 minutes.
- Season with salt and pepper to taste, then add the black beans, corn, and bell pepper. Cook until the vegetables are tender, about 5 minutes.
- While the beef mixture is cooking, prepare your rice according to package instructions.
- To assemble the bowls, divide the cooked rice among serving bowls. Top with the beef mixture, cherry tomatoes, and avocado slices.
- Garnish with fresh cilantro and a squeeze of lime juice for a fresh, zesty finish.
Tip from my experience: If you like a bit of heat, add a dash of hot sauce or some sliced jalapeños to spice things up!
