Learn how to make delicious ground beef burrito bowl. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Gather these ingredients to create a dish that’s both simple and soul-warming, much like the recipes passed down through my family.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1 cup cooked rice (white or brown, your choice)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Substitution Suggestions: Feel free to swap ground beef with turkey or chicken for a lighter option. You can also substitute the black beans with kidney or pinto beans based on your preference.

Instructions

Follow these steps to bring a piece of my kitchen into yours, where every meal tells a story.

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned.
  4. Stir in the cumin, paprika, and chili powder, ensuring the beef is well coated with the spices. Cook for an additional 2 minutes.
  5. Season with salt and pepper to taste, then add the black beans, corn, and bell pepper. Cook until the vegetables are tender, about 5 minutes.
  6. While the beef mixture is cooking, prepare your rice according to package instructions.
  7. To assemble the bowls, divide the cooked rice among serving bowls. Top with the beef mixture, cherry tomatoes, and avocado slices.
  8. Garnish with fresh cilantro and a squeeze of lime juice for a fresh, zesty finish.

Tip from my experience: If you like a bit of heat, add a dash of hot sauce or some sliced jalapeños to spice things up!
