  • 4 large eggs
  • 1/4 cup fresh parsley, chopped
  • Optional: 1/2 cup shredded cheese (cheddar or your favorite)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes.
  2. Add the ground beef, breaking it apart with a wooden spoon — the same type my mum used to wield, turning simple ingredients into magic. Cook until browned, about 5-7 minutes.
  3. Once the beef is browned, stir in the diced bell pepper, ground cumin, smoked paprika, and cinnamon, embracing the warmth of these spices. Season with salt and pepper.
  4. Create four small wells in the beef mixture and crack an egg into each well. Sprinkle a bit of salt over the eggs, cover the skillet, and cook until the eggs are set to your liking, about 5 minutes for runny yolks.
  5. If using cheese, sprinkle it over the top, cover again, and allow it to melt for about a minute. Garnish with fresh parsley before serving.
