- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color you prefer)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cinnamon (my secret touch to remind me of home)
- Salt and pepper to taste
- 4 large eggs
- 1/4 cup fresh parsley, chopped
- Optional: 1/2 cup shredded cheese (cheddar or your favorite)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes.
- Add the ground beef, breaking it apart with a wooden spoon — the same type my mum used to wield, turning simple ingredients into magic. Cook until browned, about 5-7 minutes.
- Once the beef is browned, stir in the diced bell pepper, ground cumin, smoked paprika, and cinnamon, embracing the warmth of these spices. Season with salt and pepper.
- Create four small wells in the beef mixture and crack an egg into each well. Sprinkle a bit of salt over the eggs, cover the skillet, and cook until the eggs are set to your liking, about 5 minutes for runny yolks.
- If using cheese, sprinkle it over the top, cover again, and allow it to melt for about a minute. Garnish with fresh parsley before serving.
