- 2 large sweet potatoes, peeled and diced

- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup beef broth
- 1/4 cup fresh parsley, chopped for garnish
Feel free to substitute ground turkey for beef if you’re looking for a leaner option. And if you’re feeling adventurous, a sprinkle of red pepper flakes can add a delightful kick.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon — my mum always said a wooden spoon brought more love to the dish.
- Stir in the diced bell pepper, cumin, paprika, cinnamon, salt, and pepper. Cook for another 3 minutes, allowing the spices to infuse the beef.
- Add the diced sweet potatoes and pour in the beef broth. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and let it simmer for 20-25 minutes, or until the sweet potatoes are tender and have absorbed the flavors beautifully.
- Remove the lid and increase the heat to medium-high. Cook for another 5 minutes to allow the liquid to reduce slightly, creating a lovely sauce.
- Garnish with fresh parsley before serving. Serve hot, and enjoy the comforting embrace of this delightful dish.
