- In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for another minute, until fragrant.
- Add the rice to the pot and stir to coat it in the onion mixture. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pot.
- Stir in the oregano and cinnamon, then season with salt and pepper to taste. Return the chicken thighs to the pot, placing them on top of the rice.
