  • 1 pound of beef sirloin, thinly sliced
  • 2 tablespoons of olive oil
  • 1 onion, thinly sliced
  • 1 green bell pepper, sliced
  • 3 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of paprika
  • 16 ounces of cheese tortellini
  • 2 cups of shredded cheddar cheese
  • 1 cup of beef broth
  • 1/2 cup of heavy cream
  • 1 tablespoon of Worcestershire sauce
  • 1/4 cup of grated Parmesan cheese
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 375°F. This ensures the casserole bakes evenly, allowing the cheese to melt perfectly.
  2. In a large skillet, heat olive oil over medium-high heat. Add the beef sirloin and sauté until browned, about 5 minutes. Remove the beef from the skillet and set it aside.
  3. In the same skillet, add the onion and bell pepper, cooking until softened, approximately 3-4 minutes. Stir in the garlic, salt, pepper, and paprika, cooking for an additional minute.
  4. Return the beef to the skillet, mixing it with the vegetables. Add the beef broth, heavy cream, and Worcestershire sauce, stirring to combine. Let it simmer for 2-3 minutes.
  5. While the beef mixture simmers, cook the tortellini according to the package instructions. Drain and set aside.
  6. In a large mixing bowl, combine the cooked tortellini, beef and vegetable mixture, and 1 1/2 cups of cheddar cheese. Stir until everything is evenly coated and the cheese begins to melt.
  7. Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining cheddar cheese and sprinkle with Parmesan cheese.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
