Instructions

  1. Begin by making the pastry. In a large bowl, combine the flour, sugar, and salt. Add the cold butter and use your fingertips to rub it into the flour until the mixture resembles coarse breadcrumbs. This step always reminds me of those early days, feeling flour sift through my fingers as I tried not to make a mess.
  2. Add the cold water a tablespoon at a time, gently mixing until the dough just comes together. Avoid overworking it — the secret to flaky pastry lies in keeping it cool and tender.
  3. Shape the dough into a flat rectangle, wrap it in cling film, and chill in the fridge for at least 30 minutes. This pause is important — it gives you a moment to breathe, just like those quiet Sunday mornings when the kitchen feels like a sanctuary.
  4. While the dough chills, prepare the filling. In a bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and lemon zest if using, until smooth and creamy. I love this step because the filling itself tastes like a little dreamy cloud.
  5. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
