- 2 medium cucumbers
- 1 can (about 5 ounces) of tuna packed in water, drained
- 1/4 cup mayonnaise (feel free to use Greek yogurt for a lighter version)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh dill, chopped
- 1 tablespoon capers, rinsed and chopped
- Optional: a sprinkle of paprika or a dash of hot sauce for a kick
Instructions
- Begin by washing the cucumbers thoroughly. Peel them if you prefer a softer bite, but I find that a bit of skin adds a nice crunch.
- Slice the cucumbers into rounds about 1/4 inch thick. These will be the base of your bites, so aim for uniformity.
- In a medium-sized bowl, combine the drained tuna, mayonnaise, lemon juice, and Dijon mustard. Stir until well mixed.
- Season the tuna mixture with salt, black pepper, and fold in the fresh dill and chopped capers.
- Using a small spoon, scoop a dollop of the tuna mixture onto each cucumber slice, spreading it evenly.
- If you’re feeling adventurous, sprinkle a bit of paprika or add a dash of hot sauce to each bite for a bit of extra flavor.
- Arrange the cucumber bites on a platter and serve immediately, or refrigerate for up to an hour before serving to allow the flavors to meld.
