Ingredients
Scale
- 2 large cucumbers, peeled and sliced
- 4 ripe tomatoes, chopped
- 1/2 red onion, thinly sliced
- 1 cup sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
- A pinch of cinnamon (optional but highly recommended for a nostalgic touch)
- Fresh dill, chopped, for garnish
If you find yourself without sour cream, Greek yogurt makes a delightful substitute. And for those who fancy a bit of heat, a dash of cayenne pepper can add a surprising twist.
Instructions
- In a large mixing bowl, combine the sliced cucumbers, chopped tomatoes, and red onion. Toss them gently to mix. The combination of colors should remind you of a summer garden in full bloom.
- In a separate smaller bowl, whisk together the sour cream, apple cider vinegar, olive oil, sugar, salt, and pepper. Whisk until smooth and creamy.
- Add a pinch of cinnamon to the dressing. This might sound unusual, but trust me, itβs a nod to the flavors of my childhood β subtle yet unforgettable.
- Pour the creamy dressing over the cucumber and tomato mixture. Using a wooden spoon, gently fold the dressing into the vegetables until everything is well coated. Remember, the wooden spoon is your friend β it’s gentle on the ingredients and carries the warmth of countless meals shared.
- Cover the bowl with cling film and refrigerate for at least 30 minutes. This allows the flavors to meld together beautifully, much like good friends at a long-awaited reunion.
- Before serving, sprinkle with fresh dill for a pop of color and a hint of freshness.
