- 200g (1 cup) unsalted butter
- 200g (7 oz) good quality dark chocolate
- 250g (1 1/4 cups) granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 125g (1 cup) all-purpose flour
- 30g (1/4 cup) cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon (optional, but encouraged by my mum)
- 300ml (1 1/4 cups) heavy cream
- 150g (5 oz) milk chocolate, chopped
- 2 tablespoons powdered sugar
For those with dietary preferences or restrictions, you can substitute the all-purpose flour with a gluten-free blend, and the heavy cream with a dairy-free alternative such as coconut cream, though the flavor will be slightly different.
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- In a medium saucepan, melt the butter and dark chocolate over low heat, stirring until smooth. Remove from heat and let it cool slightly.
- In a large mixing bowl, whisk together the granulated sugar and eggs until pale and fluffy. This should take about 3-4 minutes.
- Stir in the vanilla extract and the cooled chocolate mixture.
- Sift together the flour, cocoa powder, salt, and cinnamon, then gently fold into the chocolate mixture until just combined.
- Pour the batter into the prepared baking pan, smoothing the top with a spatula, and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- While the brownies are cooling, make the mousse by heating 100ml (1/2 cup) of the heavy cream until just simmering, then pouring it over the chopped milk chocolate in a heatproof bowl. Let it sit for a minute, then stir until smooth.
- In another bowl, whip the remaining heavy cream with the powdered sugar until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully combined.
- Once the brownies have cooled, spread the mousse evenly over the top. Refrigerate the brownies for at least 2 hours to set the mousse.
- Cut into squares and serve, perhaps with a sprinkle of cocoa powder or a few chocolate shavings for that extra touch of elegance.
