Ingredients
Scale
To create this delightful pie, you’ll need a few simple ingredients. Here’s what you’ll need:
- 1 unbaked 9-inch pie crust
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1/2 cup butter, melted
- 4 large eggs
- 1/4 cup bourbon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 1/2 cups pecan halves
If you’re looking for substitutions, you can use dark corn syrup for a deeper flavor or swap the bourbon for an equal amount of apple juice if you prefer a non-alcoholic version.
Instructions
- Preheat your oven to 350°F (175°C). Place the pie crust into a 9-inch pie pan and set aside.
- In a large mixing bowl, combine the sugar, corn syrup, melted butter, eggs, bourbon, vanilla extract, and salt. Whisk until well combined and smooth.
- Spread the chocolate chips evenly over the bottom of the pie crust. Pour the filling mixture over the chocolate chips.
- Arrange the pecan halves on top of the filling, creating a beautiful pattern.
- Bake in the preheated oven for 50 to 55 minutes, or until the pie is set and the top is golden brown. A gentle jiggle in the center is normal.
- Remove from the oven and allow the pie to cool completely before serving. This helps the filling set properly.
A little tip from my mum: if the edges of your pie crust start to brown too quickly, cover them with foil to prevent burning.
