- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning mix
- 1 cup canned black beans, drained and rinsed
- 1 cup canned corn, drained
- 12 taco shells
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
Feel free to swap the beef for turkey or chicken if you’re looking for a lighter option. You can also add more veggies, such as diced bell peppers or tomatoes, to make it your own.
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion becomes translucent, about 3-4 minutes.
- Add the ground beef, breaking it apart with a spoon. Cook until browned, approximately 5-7 minutes. Drain excess fat if necessary.
- Stir in the taco seasoning mix, black beans, corn, and salt and pepper. Cook for another 5 minutes, allowing the flavors to meld beautifully.
- Line a baking dish with the taco shells and spoon the beef mixture evenly into each shell.
- Top each taco with a generous portion of shredded cheddar cheese.
- Place the dish in the oven and bake for 10-12 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, spoon salsa over the top, and sprinkle with fresh cilantro if desired.
