Learn how to make delicious Cheesy Oven-Baked Tacos. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned corn, drained
  • 12 taco shells
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Feel free to swap the beef for turkey or chicken if you’re looking for a lighter option. You can also add more veggies, such as diced bell peppers or tomatoes, to make it your own.

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion becomes translucent, about 3-4 minutes.
  3. Add the ground beef, breaking it apart with a spoon. Cook until browned, approximately 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the taco seasoning mix, black beans, corn, and salt and pepper. Cook for another 5 minutes, allowing the flavors to meld beautifully.
  5. Line a baking dish with the taco shells and spoon the beef mixture evenly into each shell.
  6. Top each taco with a generous portion of shredded cheddar cheese.
  7. Place the dish in the oven and bake for 10-12 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven, spoon salsa over the top, and sprinkle with fresh cilantro if desired.

These tacos are a breeze to whip up, and the aroma will transport you to a happy place the moment you open the oven door.
