- 1 cup unsalted butter
- 1 and 1/2 cups packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped pecans
- Optional: 1/2 cup white chocolate chips for added sweetness
Substitution Tip: If you’re out of pecans, walnuts make a lovely alternative, adding their own unique flavor to the blondies.
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- In a medium saucepan, melt the butter over medium heat. Continue to cook, stirring frequently, until the butter turns a golden brown and emits a nutty aroma, about 5-7 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the brown butter and brown sugar, mixing until smooth. Stir in the eggs and vanilla extract, blending well.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped pecans (and white chocolate chips, if using). Spread the batter evenly in the prepared baking pan.
- Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean. My mum always said to trust your nose — when you can smell the rich, buttery aroma, they’re nearly done!
- Allow the blondies to cool in the pan before slicing into squares.
