  • 1 and 1/2 cups packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 teaspoon baking powder

  • 1 cup chopped pecans
  • Optional: 1/2 cup white chocolate chips for added sweetness

Substitution Tip: If you’re out of pecans, walnuts make a lovely alternative, adding their own unique flavor to the blondies.

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a medium saucepan, melt the butter over medium heat. Continue to cook, stirring frequently, until the butter turns a golden brown and emits a nutty aroma, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a large bowl, combine the brown butter and brown sugar, mixing until smooth. Stir in the eggs and vanilla extract, blending well.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped pecans (and white chocolate chips, if using). Spread the batter evenly in the prepared baking pan.
  6. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean. My mum always said to trust your nose — when you can smell the rich, buttery aroma, they’re nearly done!
  7. Allow the blondies to cool in the pan before slicing into squares.
